Because Superman would never intentionally kill someone, and limits his powers when fighting. Batman knows this and take advantage of it. I mean, all Superman really needs to do is fly in space and vaporize Batman with his heat vision, in an instant. To be find ways to take down the Batman alive is MUCH MUCH tougher, because you're giving him a fighting chance.

It's the inherent power of Man. Supes is an alien and has these ridiculous powers, and so does not know--on a regular basis--the desperation of being so close to death. Batman does. His fighting technique is steeped in desperation--punches to the throat, kicks to the knees, striking from the shadows, etc. He could die any moment in a battle with Superman, and he knows this, so he fights accordingly. Superman--through no conscious fault of his own--is lazy when he battles Batman, comparatively. He swings wide because he doesn't need to be precise.

That's how I rationalize it.

Precisely. Even in Hush (not a fan, btw) an Ivy-controlled Supes still managed to hold back. Regular Supes would never swing for the fences against Batman - heck most of time Superman isn't even trying to FIGHT Batman, just reason with him. That's how Batman wins, he's the only one fighting.
